Mildly spicy and soft cooking, retain their shape during cooking. For Asian-oriental dishes such as dal, falafel or hummus. For salads, burgers, stews or roasted as a snack.
Wash the chickpeas and soak in plenty of cold water for 8 - 12 hours. Then drain the water and rinse the chickpeas. Boil 1 cup of chickpeas with about 3 cups of fresh water and then simmer gently for about 60-90 minutes at low temperature with the lid closed. Only add salt after cooking.
