Agar-agar is a plant-based alternative to conventional gelling aids, that is often used in vegan cuisine. Make fruit spreads, glaze gâteaux or use the agar-agar to thicken sauces.
Agar-agar is naturally vegan and gluten-free, and a little goes a long way. The agar-agar has a neutral taste, so you can use it with almost any dish.
Instructions:
- Use 1 teaspoon per 1/2 L of liquid or 500g of fruit
- Use 2 teaspoons for pastries and puddings
- Before use, mix the agar-agar with cold liquid until there are no lumps, then cook for about 5 minutes, stirring constantly.
- Attention: wait until whipped cream has gelled before folding it in.
Note: The algae used for this agar-agar come from the coast of Morocco. The algae are harvested by divers in an environmentally friendly manner, are dried in the sun, and are often stored for several years. Only then are the algae finely ground and bottled.
